How to Make Armenian Rice

  1. In a large skillet, brown 1/2 cup chopped onion, 1/2 cup chopped green pepper, 1/2 cup chopped celery, and 1/2 cup chopped carrots until softened.
  2. Transfer the browned vegetables to a 4-quart casserole dish.
  3. Add 1 1/2 cups long-grain rice, 1 teaspoon salt, 1/2 teaspoon black pepper, 1/4 teaspoon turmeric, 1/4 teaspoon garlic powder, and 4 cups chicken broth to the casserole dish. Stir until all ingredients are well combined.
  4. Bake in a preheated 300°F (150°C) oven for 3 hours, or until the rice is tender and all the liquid has been absorbed. Check the rice after 2 hours and add a little extra broth if it seems dry.
