How to Make Artichoke Cheese Strudel

  1. Melt 1/4 cup (57g) butter in a skillet over medium heat. Sauté 1/2 cup (75g) chopped yellow onion until softened, about 5 minutes. Do not brown.
  2. Add 2 cloves minced garlic; stir and cook for 1 minute.
  3. In a separate bowl, beat together 8 ounces (227g) cream cheese and 8 ounces (227g) cottage cheese until smooth and creamy.
  4. Beat in 2 large eggs, one at a time, mixing well after each addition.
  5. Stir in 1 teaspoon garlic salt, 1 tablespoon chopped fresh parsley, 1 tablespoon chopped fresh tarragon, and 1/4 teaspoon black pepper.
  6. Add the sautéed onions and any remaining butter from the skillet to the cheese mixture. Stir to combine.
  7. Add 2 (6 ounce) jars of artichoke hearts in water (or 1 (10 ounce) can), drained extremely well, 1/2 cup (50g) grated Parmesan cheese, and 1/2 cup (30g) panko bread crumbs. Stir gently to combine. (Note: Using artichoke hearts packed in oil is also acceptable; just be sure to drain VERY well.)
