How to Make Artichoke Stuffing

  1. Preheat oven to 400°F (200°C).
  2. Saute 1 medium onion, chopped, in 2 tablespoons olive oil until translucent (about 5 minutes).
  3. Add 2 cloves garlic, minced, and saute for 2-3 minutes more.
  4. In a large bowl, combine 1 ½ cups cooked long-grain rice, 4 cups cubed day-old bread (about 6 slices), and 1 (14-ounce) can artichoke hearts, quartered.

  6. In a separate bowl, whisk together 2 large eggs and 1 cup chicken broth.
