How to Make Artichoke Stuffing
- Preheat oven to 400°F (200°C).
- Saute 1 medium onion, chopped, in 2 tablespoons olive oil until translucent (about 5 minutes).
- Add 2 cloves garlic, minced, and saute for 2-3 minutes more.
- In a large bowl, combine 1 ½ cups cooked long-grain rice, 4 cups cubed day-old bread (about 6 slices), and 1 (14-ounce) can artichoke hearts, quartered.
- Add the sauteed onion and garlic mixture to the bread/rice bowl and toss gently to combine.
- In a separate bowl, whisk together 2 large eggs and 1 cup chicken broth.
- Pour the egg mixture into the bread mixture and toss until evenly moistened. Do not overmix.
- Stir in 1 teaspoon dried oregano, ½ teaspoon salt, and ¼ teaspoon black pepper.
- Press the stuffing mixture into a greased 9x13 inch baking pan.
- Bake for 50-60 minutes, or until golden brown and heated through.
