How to Make Asparagus New Potato And Chive Frittata
- Place 1 lb small new potatoes in a steamer basket.
- Steam until almost tender, about 8-10 minutes.
- Add 1 lb asparagus spears to the steamer and steam for an additional 2-3 minutes.
- Remove vegetables from the steamer and set aside to cool slightly. Roughly chop the potatoes and asparagus.
- Preheat your broiler to high.
- In a medium bowl, whisk together 6 large eggs, 1/4 cup egg substitute, 1/2 teaspoon salt, 1/4 teaspoon black pepper, and 2 tablespoons chopped fresh chives.
- Coat a 10-inch nonstick, ovenproof skillet with cooking spray and place over medium heat.
- Add the chopped potatoes and asparagus to the skillet and sauté for 2-3 minutes, until slightly softened.
- Reduce heat to low and pour the egg mixture evenly over the vegetables.
- Cover the skillet and cook until the eggs are mostly set around the edges, about 5-7 minutes.
- Uncover and place the skillet under the preheated broiler for 1-2 minutes, or until the top is lightly golden brown and puffed.
