Ingredients for Asparagus With Morels
- White Asparagus
- Green Asparagus
- 4 tablespoons butter
- Shallot
- Morel
- Salt And Pepper
- Fresh Tarragon
- 1 tablespoon fresh lemon juice
How to Make Asparagus With Morels
- Snap off the tough ends of 1 pound asparagus. Cook asparagus in a pot of boiling salted water for 3-5 minutes, or until tender-crisp. Alternatively, microwave asparagus in a microwave-safe dish with a splash of water for 2-3 minutes.
- Immediately transfer the asparagus to a bowl of ice water to stop the cooking process and preserve its vibrant green color.
- Gently pat the asparagus dry with paper towels.
- Melt 3 tablespoons of butter in a large skillet over medium heat. Add 2 finely chopped shallots and cook until softened, about 3 minutes.
- Add 1 cup of dried morels (or 4 oz fresh morels, cleaned and trimmed) to the skillet and sauté for 5 minutes, stirring occasionally, until heated through and fragrant.
- Add the cooked asparagus, 1 tablespoon of chopped fresh tarragon, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper to the skillet. Cook for another 2-3 minutes, until everything is heated through and well combined.
- Stir in 1 tablespoon of cold butter just off the heat to create a luxurious sauce.
- Stir in 1 tablespoon of fresh lemon juice, and garnish with an extra sprinkle of fresh tarragon before serving. Enjoy!
Chef's Tip for Extra Flavor
Want to unlock deeper, more complex flavors? Try toasting your whole spices before grinding them, or blooming ground spices in a little warm oil to enhance their aroma. Deglazing your pan with a bit of stock, wine, or even water after browning ingredients can capture those tasty caramelized bits, adding richness to your dish.
