- In a medium bowl, mix together 1 lb hot Italian sausage (or chorizo) with 1 cup shredded cheddar cheese and 1/2 cup crumbled cotija cheese.
- Slice 1 large habanero pepper into 16 equal pieces. Remove and discard all seeds and membranes.
- Split 16 serrano peppers lengthwise and remove seeds.
- Gently open the serrano peppers to create a small pocket.
- Using a teaspoon, fill each serrano pepper with the sausage and cheese mixture.
- Gently press one habanero slice into the top of each filled serrano pepper.
- Wrap each filled serrano pepper with 1/2 slice of peppered bacon.
- Secure the bacon with a toothpick.
