Ingredients for Australian Crash Hot Potatoes
- Baby Red Potatoes
- 2 tablespoons olive oil
- 2 cloves minced garlic
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Fresh Herb
- 1/4 cup grated Parmesan cheese
How to Make Australian Crash Hot Potatoes
- Wash and scrub 1 lb (450g) baby potatoes thoroughly.
- Boil or microwave the potatoes until fork-tender (approximately 15-20 minutes depending on size and method).
- Preheat your oven to 450°F (230°C).
- Line a baking sheet with parchment paper and drizzle with 1 tablespoon of olive oil.
- Once the potatoes are cool enough to handle, place them on the prepared baking sheet. Using a potato masher, gently smash each potato, rotating the masher to create a slightly flattened shape. Don't smash them completely flat; leave some texture.
- Drizzle the smashed potatoes with an additional 1 tablespoon of olive oil. Season generously with 1 teaspoon of salt and 1/2 teaspoon of black pepper.
- Sprinkle 2 cloves of minced garlic and 1/4 cup of chopped fresh herbs (rosemary, thyme, or a mix are great!) evenly over the potatoes.
- Top each potato with 1/4 cup of grated Parmesan cheese.
- Bake for 20-25 minutes, or until golden brown and crispy.
- Serve immediately and enjoy!
Chef's Tip for Extra Flavor
Small additions can make a big impact! Try a sprinkle of fresh herbs, a dash of your favorite spice blend, or a squeeze of citrus just before serving to really enhance the flavors of your dish.
