How to Make Authentic Meat Loaf

  1. Preheat oven to 350°F (175°C).
  2. Lightly grease a 4x8 inch baking pan with nonstick cooking spray.
  3. In a medium bowl, whisk together 1/2 cup tomato sauce, 3 tablespoons salsa, 1/4 teaspoon black pepper, and 2 large egg whites.
  4. Add 1/2 cup chopped onion, 1/2 cup chopped mushrooms, 2 cloves minced garlic, and 1/2 cup rolled oats to the wet ingredients. Mix well.
  5. In a large bowl, gently combine 1 pound ground beef and 1 pound ground turkey.
  6. Add the wet ingredient mixture to the meat mixture and gently combine. Do not overmix.
  7. Shape the meat mixture into a 4x8-inch rectangular loaf and place it in the prepared baking pan.
  8. In a small bowl, combine 1/4 cup tomato sauce and 1 tablespoon salsa.
  9. Drizzle the sauce mixture evenly over the top of the meatloaf.
  10. Bake for 55-65 minutes, or until a meat thermometer inserted into the center reads 160°F (71°C), and the juices run clear.
  11. Remove from oven and let stand for 5 minutes before slicing and serving.

Chef's Tip for Extra Flavor

Chef's secret: layers of flavor make a dish truly memorable! Consider what a little extra something could bring – perhaps a touch of acidity like a good vinegar or citrus zest, a hint of smokiness from paprika, a bit of umami from mushrooms or soy sauce, or a sprinkle of toasted nuts for texture. Experiment and taste as you go!
