- 1 cup arugula (rocket)
- Mixed Fresh Herbs
- Olive Oil
- 1 tablespoon capers
How to Make Avocado And Feta Pasta Salad
- Cook 8 ounces of pasta according to package directions. Drain and rinse with cold water to cool.
- While the pasta cooks, prepare the remaining ingredients. Dice 1 ripe avocado, halve and thinly slice 4 ounces of feta cheese, chop 1/2 cup cherry tomatoes, and roughly chop 1/4 cup walnuts or pecans.
- In a large bowl, combine the cooked pasta, avocado, feta, tomatoes, and nuts.
- Add 2 cups of baby spinach and 1 cup of arugula (rocket).
- Roughly chop 2 tablespoons of fresh herbs (such as basil, parsley, or dill) and add to the bowl.
- In a small bowl, whisk together 1/4 cup extra virgin olive oil, the zest and juice of 1 lemon, and 1 tablespoon of capers.
- Pour the dressing over the salad and toss gently to combine. Season with salt and pepper to taste.
- Serve immediately or chill for later. Garnish with extra feta and herbs if desired.
