  • Avocados
  • Lemon, Juice And Zest Of
  • Sun Dried Tomatoes Packed In Oil
  • Feta Cheese

  • 1 cup arugula (rocket)
  • Mixed Fresh Herbs
  • Olive Oil
  • 1 tablespoon capers

How to Make Avocado And Feta Pasta Salad

  1. Cook 8 ounces of pasta according to package directions. Drain and rinse with cold water to cool.
  2. While the pasta cooks, prepare the remaining ingredients. Dice 1 ripe avocado, halve and thinly slice 4 ounces of feta cheese, chop 1/2 cup cherry tomatoes, and roughly chop 1/4 cup walnuts or pecans.
  3. In a large bowl, combine the cooked pasta, avocado, feta, tomatoes, and nuts.
  4. Add 2 cups of baby spinach and 1 cup of arugula (rocket).
  5. Roughly chop 2 tablespoons of fresh herbs (such as basil, parsley, or dill) and add to the bowl.
  6. In a small bowl, whisk together 1/4 cup extra virgin olive oil, the zest and juice of 1 lemon, and 1 tablespoon of capers.
  7. Pour the dressing over the salad and toss gently to combine. Season with salt and pepper to taste.
