How to Make Awesome Lentil Barley Salad
- Rinse 1 cup of pearl barley and 1 cup of brown or green lentils in a fine-mesh sieve under cold water.
- In a large pot, combine the rinsed barley and lentils with 4 cups of water and 1 teaspoon of salt.
- Bring the mixture to a boil over high heat. Once boiling, reduce heat to low, cover, and simmer for 45-50 minutes, or until the barley and lentils are tender but still hold their shape. Stir occasionally to prevent sticking.
