How to Make Awesome Marinated Sweet Potato Salad
- Boil 1.5 lbs of sweet potatoes, peeled and cubed, in a large saucepan of salted boiling water until tender, about 20 minutes.
- Drain the sweet potatoes and let them cool completely.
- While the sweet potatoes cool, whisk together the following ingredients in a medium bowl: 1/4 cup olive oil, 1/4 cup apple cider vinegar, 2 tablespoons brown sugar, 1 tablespoon Dijon mustard, 1 teaspoon ground cumin, 1/2 teaspoon smoked paprika, 1/4 teaspoon cayenne pepper (optional), 1/4 cup chopped fresh cilantro, and 2 bay leaves.
- Once the sweet potatoes are cool, gently fold them into a large bowl with 1/2 cup chopped red onion and 1/2 cup chopped green bell pepper.
- Pour the dressing over the sweet potatoes, onions, and peppers. Toss gently to coat evenly.
