How to Make Awesome Marinated Sweet Potato Salad

  1. Boil 1.5 lbs of sweet potatoes, peeled and cubed, in a large saucepan of salted boiling water until tender, about 20 minutes.
  2. Drain the sweet potatoes and let them cool completely.
  3. While the sweet potatoes cool, whisk together the following ingredients in a medium bowl: 1/4 cup olive oil, 1/4 cup apple cider vinegar, 2 tablespoons brown sugar, 1 tablespoon Dijon mustard, 1 teaspoon ground cumin, 1/2 teaspoon smoked paprika, 1/4 teaspoon cayenne pepper (optional), 1/4 cup chopped fresh cilantro, and 2 bay leaves.
  4. Once the sweet potatoes are cool, gently fold them into a large bowl with 1/2 cup chopped red onion and 1/2 cup chopped green bell pepper.
