How to Make Awesome Mini Spinach Quiche Bites
- Preheat oven to 375°F (190°C).
- If using pre-made mini tart shells, skip to step 5. Otherwise, on a lightly floured surface, use a 1 1/2-inch biscuit cutter to cut 12 rounds from thawed pie crust.
- Gently press each round into the bottom and up the sides of ungreased mini muffin cups. Repeat with a second pie crust if needed.
- In a medium skillet, cook 4 slices bacon until crispy. Remove bacon with a slotted spoon and set aside; reserve bacon grease.
- Add 1/2 cup chopped yellow onion to the skillet with the reserved bacon grease. Cook for 5 minutes, or until softened, stirring constantly. Set aside.
- In a medium bowl, crumble the cooked bacon. Add the cooked onions.
- Whisk together 6 large eggs, 1/2 cup heavy cream, 1/4 teaspoon salt, 1/8 teaspoon nutmeg, and 1/4 cup grated Parmesan cheese.
- Add 10 ounces fresh spinach (squeeze out excess water after chopping) to the egg mixture. Stir well to combine.
- Add the crumbled bacon and onions to the egg mixture and stir to combine.
- Evenly divide the mixture among the prepared mini tart shells.
- Bake for 20-25 minutes, or until puffed and golden brown.
- Let cool in the pan on a wire rack for 10 minutes.
- Gently loosen the quiches from the pan using a knife or offset spatula.
- Serve warm or at room temperature. Store leftovers in the refrigerator.
