  • 4 slices bacon, cooked and crumbled
  • 1 medium head of cabbage, finely chopped
  • Red Capsicum
  • 1 medium onion, chopped
  • Potatoes
  • Garlic Cloves
  • Marjoram
  • Thyme
  • Fresh Parsley
  • Plain Flour

  • Parmesan Cheese

How to Make Bacon And Cabbage Loaf

  1. Preheat oven to 350°F (175°C). Grease a 9x5 inch loaf pan.
  2. Finely chop the cabbage (about 1 medium head).
  3. Cook bacon until crisp. Remove bacon, crumble, and set aside, reserving 2 tablespoons of bacon grease.
  4. In a large skillet, sauté the onion and carrots in the reserved bacon grease until softened (about 5 minutes).
  5. Add the chopped cabbage and cook until slightly wilted (about 5-7 minutes).
  6. In a large bowl, combine the cooked cabbage mixture, cooked rice, crumbled bacon (if using), egg, breadcrumbs, parsley, salt, and pepper.
  7. Mix well to combine all ingredients.
  8. Pour mixture into the prepared loaf pan and shape into a loaf.
  9. Bake for 90 minutes, or until the loaf is golden brown and cooked through. A toothpick inserted into the center should come out clean.
  10. Let cool for 10 minutes before slicing and serving. Enjoy with your favorite side dish!

Chef's Tip for Extra Flavor

Chef's secret: layers of flavor make a dish truly memorable! Consider what a little extra something could bring – perhaps a touch of acidity like a good vinegar or citrus zest, a hint of smokiness from paprika, a bit of umami from mushrooms or soy sauce, or a sprinkle of toasted nuts for texture. Experiment and taste as you go!
