How to Make Bacon Cheese Muffins
- Preheat oven to 400°F (200°C).
- Cook 4 slices of bacon in a large skillet over medium-high heat until crisp. Remove bacon and set aside, reserving 1/3 cup of bacon grease.
- If needed, add enough oil to the bacon grease to measure 1/3 cup.
- In a small bowl, whisk together the 1/3 cup bacon grease, 1 large egg, and 1/4 cup milk. Set aside.
- Crumble the cooked bacon into small pieces.
- In a large bowl, whisk together 1 1/2 cups all-purpose flour, 1/4 cup granulated sugar, and 2 teaspoons baking powder.
- Make a well in the center of the dry ingredients.
- Pour the wet ingredients (bacon grease mixture) into the well and gently stir until just combined. Do not overmix; the batter should be slightly lumpy.
- Fold in 1/2 cup crumbled bacon and 1/2 cup shredded cheddar cheese.
- Fill greased or paper-lined 2 1/2-inch muffin cups about 3/4 full.
- Bake for 15-20 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
- Remove from oven and let cool in the muffin tin for a few minutes before transferring to a wire rack to cool completely.
