  1. Preheat oven to 400°F (200°C).
  2. Cook 4 slices of bacon in a large skillet over medium-high heat until crisp. Remove bacon and set aside, reserving 1/3 cup of bacon grease.
  3. If needed, add enough oil to the bacon grease to measure 1/3 cup.
  4. In a small bowl, whisk together the 1/3 cup bacon grease, 1 large egg, and 1/4 cup milk. Set aside.
  5. Crumble the cooked bacon into small pieces.
  6. In a large bowl, whisk together 1 1/2 cups all-purpose flour, 1/4 cup granulated sugar, and 2 teaspoons baking powder.
  7. Make a well in the center of the dry ingredients.
  8. Pour the wet ingredients (bacon grease mixture) into the well and gently stir until just combined. Do not overmix; the batter should be slightly lumpy.
  9. Fold in 1/2 cup crumbled bacon and 1/2 cup shredded cheddar cheese.
