How to Make Bacon Stuffing
- Preheat oven to 400°F (200°C).
- Break 1 loaf (about 16 oz) of day-old bread into bite-sized pieces and place in a large bowl.
- Fry 1/2 lb bacon in a large skillet over medium-high heat until crisp. Remove bacon with a slotted spoon and set aside, reserving 1/4 cup bacon grease in the skillet.
- Add 1 medium onion, chopped, and 2 celery stalks, chopped, to the skillet with the bacon grease. Add 4 tablespoons of butter.
- Sauté for 5-7 minutes, until softened.
- Set aside the onion and celery mixture to cool slightly.
- In a large bowl, combine the bread, 1 large egg, 1 teaspoon dried sage, 1 teaspoon dried thyme, 1/2 teaspoon dried rosemary, 1/2 cup chicken broth, the cooled bacon and vegetable mixture, and the crumbled bacon.
- Mix gently until evenly combined but still slightly moist.
- Spoon the stuffing into a lightly greased 9x5 inch loaf pan.
- Bake at 400°F (200°C) for 45-50 minutes, or until golden brown and heated through.
