How to Make Baked Cheesecake

  1. Preheat oven to 350°F (175°C). Grease and flour a 9-inch springform pan.
  2. In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Press firmly into the bottom of the prepared pan.
  3. In a large bowl, beat cream cheese until smooth and creamy. Gradually beat in sugar until combined.
  4. Beat in eggs one at a time, then stir in vanilla extract and sour cream.
  5. Pour batter over the graham cracker crust.
  6. Place the springform pan in a larger roasting pan. Pour enough hot water into the roasting pan to come halfway up the sides of the springform pan (this creates a water bath).
  7. Bake for 85 minutes, or until the cheesecake is set around the edges and the center is just slightly jiggly.
  8. Turn off the oven and leave the cheesecake in the oven with the door slightly ajar for 1 hour.
  9. Remove from oven and let cool completely on a wire rack.
  10. Once completely cool, refrigerate for at least 4 hours, or preferably overnight, before serving.
