How to Make Baked Chicken Reuben

  1. Preheat oven to 325°F (165°C). Lightly spray a 9x13 inch casserole dish with vegetable oil.
  2. Place 1.5 lbs of boneless, skinless chicken breasts in the prepared casserole dish.
  3. Season chicken generously with salt and pepper.
  4. Evenly spread 2 cups of drained sauerkraut over the chicken.
  5. Top the sauerkraut with 6-8 slices of Swiss cheese.
  6. In a small bowl, whisk together 1 cup of your favorite Thousand Island dressing (or Russian dressing). Pour dressing evenly over the cheese.
  7. Cover the casserole dish with foil.
  8. Bake for 1 hour and 30 minutes, or until a fork can be easily inserted into the chicken and it's cooked through.
  9. Remove foil during the last 5 minutes of baking to allow the cheese to brown slightly.
  10. Sprinkle with 2 tablespoons of chopped fresh parsley, if desired. Let stand for 5-10 minutes before serving.
