How to Make Baked Lentils And Vegetables
- Preheat oven to 350°F (175°C).
- Heat 2 tablespoons of olive oil in a large saucepan over medium heat.
- Add 1 medium onion, chopped, 1 bell pepper (any color), chopped, and 2 cloves garlic, minced. Sauté for 5-7 minutes, or until softened.
- Stir in 1 cup brown or green lentils, rinsed, 1 (14.5 ounce) can diced tomatoes, undrained, 4 cups vegetable broth, 1 teaspoon dried oregano, 1/2 teaspoon dried basil, 1/4 teaspoon salt, and 1/4 teaspoon black pepper.
- Add 1 cup broccoli florets.
- Bring to a simmer, then transfer the mixture to a 2 1/2-quart casserole dish coated with cooking spray.
- Sprinkle 1/4 cup grated Parmesan cheese over the top.
- Cover and bake for 45-50 minutes, or until the lentils are tender and the liquid is absorbed. If the top starts to brown too much, loosely cover with foil.
