How to Make Baked Maple And Cinnamon Squash
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Cut a 2-pound butternut squash in half lengthwise, remove seeds and stringy pulp.
- In a small bowl, whisk together 1/4 cup pure maple syrup, 2 tablespoons olive oil, 1 teaspoon ground cinnamon, 1/2 teaspoon ground ginger, 1/4 teaspoon ground nutmeg, and a pinch of salt.
- Place squash halves, cut-side up, on the prepared baking sheet. Brush half of the maple cinnamon mixture evenly over the cut surfaces of the squash.
- Bake for 25 minutes.
- Remove from oven and brush with the remaining maple cinnamon mixture.
- Return to the oven and bake for another 20 minutes, or until the squash is very tender and slightly caramelized.
- Let cool slightly before serving.
