- Preheat oven to 425°F (220°C).
- Heat 1 tablespoon of olive oil in a large saucepan over medium-high heat.
- Add 1/2 cup chopped onion and 2 cloves minced garlic. Season with 1/2 teaspoon salt and 1/4 teaspoon black pepper. Cook until onions are softened, about 5 minutes.
- Add 1 teaspoon dried thyme, 28 ounces (794g) canned crushed tomatoes, and bring to a boil.
- Reduce heat and simmer for 15 minutes, stirring occasionally, breaking up the tomatoes with a spoon.
- Simmer until the sauce has reduced to about 5 cups.
- While the sauce simmers, cook 1 pound (454g) frozen ravioli according to package directions until they float to the surface. Drain well.
- In a large casserole dish, gently toss the cooked ravioli with the marinara sauce.
- Top with 1 1/2 cups shredded mozzarella cheese and 1/2 cup grated Parmesan cheese.
- Bake for 20-25 minutes, or until the cheese is melted, bubbly, and golden brown.
