- 4 large sweet onions (about 2 pounds total)
- Coarse Salt
- Olive Oil
- 1 cup chopped cremini mushrooms
- 1/2 cup chopped ham
- Fresh Ground Black Pepper
- Red Wine
- 1/4 cup chopped fresh parsley
- 1/2 cup grated Gruyère cheese
How to Make Baked Stuffed Sweet Onions
- Preheat oven to 375°F (190°C).
- Halve 4 large sweet onions (about 2 pounds total) from top to bottom, leaving root intact. Carefully remove the center, creating a well in each half.
- In a large bowl, combine 1/2 cup chopped ham, 1 cup chopped cremini mushrooms, 1/2 cup grated Gruyère cheese, 1/4 cup chopped fresh parsley, 2 tablespoons olive oil, 1 tablespoon Dijon mustard, salt and pepper to taste.
- Stuff the onion halves generously with the ham and mushroom mixture.
- Place the stuffed onions in a baking dish and pour 1/2 cup chicken broth into the bottom of the dish.
- Bake for 60-75 minutes, or until the onions are tender and the filling is heated through and slightly browned. If needed, add a bit more broth to the bottom during the last 20 minutes of baking.
- Garnish with fresh parsley before serving. Enjoy!
