Ingredients for Bacon And Onion Pie
- 1 lb potatoes, peeled and cubed
- Vegetable Oil
- 6 oz bacon, diced
- 2 tbsp butter
- 2 large onions, thinly sliced
- 1 tsp brown sugar
- Cheddar Cheese
- Tomatoes
- Salt & Freshly Ground Black Pepper
How to Make Bacon And Onion Pie
- Preheat oven to 375°F (190°C).
- Boil the potatoes until tender (about 15-20 minutes). Drain and mash.
- While potatoes cook, fry the bacon in half the butter and oil until crispy. Remove and set aside.
- Add sliced onions to the pan, along with salt, pepper, and brown sugar. Cook gently until caramelized (about 10-15 minutes), stirring occasionally.
- Return the bacon to the pan and stir to combine. Deglaze the pan with 2 tbsp of chicken broth or water, scraping up any browned bits.
- Stir 4 oz of the grated cheese into the mashed potatoes. Season with salt and pepper.
- Spoon the potato mixture over the onions and bacon in an oven-safe dish.
- Sprinkle the remaining 4 oz of cheese over the top and arrange tomato slices on top.
- Bake for 15-20 minutes, or until the cheese is melted and bubbly and the top is lightly browned.
- Serve immediately with your favourite side dish, such as baked beans or peas.
