Ingredients for Bacon And Onion Pie

  • 1 lb potatoes, peeled and cubed
  • Vegetable Oil
  • 6 oz bacon, diced
  • 2 tbsp butter
  • 2 large onions, thinly sliced
  • 1 tsp brown sugar
  • Cheddar Cheese
  • Tomatoes
  • Salt & Freshly Ground Black Pepper

How to Make Bacon And Onion Pie

  1. Preheat oven to 375°F (190°C).
  2. Boil the potatoes until tender (about 15-20 minutes). Drain and mash.
  3. While potatoes cook, fry the bacon in half the butter and oil until crispy. Remove and set aside.
  4. Add sliced onions to the pan, along with salt, pepper, and brown sugar. Cook gently until caramelized (about 10-15 minutes), stirring occasionally.
  5. Return the bacon to the pan and stir to combine. Deglaze the pan with 2 tbsp of chicken broth or water, scraping up any browned bits.
  6. Stir 4 oz of the grated cheese into the mashed potatoes. Season with salt and pepper.
  7. Spoon the potato mixture over the onions and bacon in an oven-safe dish.
  8. Sprinkle the remaining 4 oz of cheese over the top and arrange tomato slices on top.
  9. Bake for 15-20 minutes, or until the cheese is melted and bubbly and the top is lightly browned.
  10. Serve immediately with your favourite side dish, such as baked beans or peas.
