How to Make Banana Dahl

  1. Finely chop 1 large onion, 2 cloves garlic, and 1 inch ginger. Gently sauté in a pot with 4 sprays of cooking oil over medium-low heat for 10 minutes, until softened and golden.
  2. Add 1 teaspoon turmeric powder and sauté for 1 minute more.
  3. Stir in 1 cup red lentils, and cook for 2 minutes.
  4. Pour in 4 cups vegetable stock (or water), bring to a boil, then reduce heat and simmer gently for 15 minutes.
  5. Add 1 teaspoon ground cumin, 1/2 teaspoon ground coriander, 1/4 teaspoon chili powder (adjust to taste), 1/2 teaspoon garam masala, and salt to taste. Simmer for a further 10 minutes, stirring occasionally.
  6. If using, add 1 ripe banana, mashed, a couple of minutes before serving to warm through. (Optional)
  7. Serve hot with warm chapattis or naan bread.
