How to Make Banana Loaf

  1. Preheat oven to 160°C fan/180°C conventional/Gas Mark 4.
  2. Grease and flour a 20 x 13cm loaf tin. Line the base with greaseproof paper.
  3. In a large bowl, cream together 175g softened butter and 175g caster sugar using an electric whisk until light and fluffy.
  4. Beat in 3 large eggs one at a time, mixing well after each addition.
  5. Stir in 3 ripe mashed bananas (approx. 300g), 50g chopped pecans, 50g raisins, and 100ml buttermilk.
  6. In a separate bowl, sift together 200g self-raising flour and 1 tsp bicarbonate of soda. Gently fold the dry ingredients into the wet ingredients until just combined. Do not overmix.
  7. Spoon the batter into the prepared tin and level the top.
  8. Bake for 60-75 minutes, or until a skewer inserted into the center comes out almost clean.
  9. Remove from the oven and let stand in the tin for 10 minutes before turning out onto a wire rack to cool completely.
  10. For the icing: Whisk together 100g icing sugar with 2-3 teaspoons of cold water until smooth and pourable.
  11. Drizzle the icing over the cooled loaf.
