Ingredients for Banana Loaf
- 175g softened butter
- Light Muscovado Sugar
- 3 large eggs
- Bananas
- 50g chopped pecans
- 50g raisins
- 100ml buttermilk
- Plain Flour
- 1 tsp bicarbonate of soda
- 100g icing sugar
How to Make Banana Loaf
- Preheat oven to 160°C fan/180°C conventional/Gas Mark 4.
- Grease and flour a 20 x 13cm loaf tin. Line the base with greaseproof paper.
- In a large bowl, cream together 175g softened butter and 175g caster sugar using an electric whisk until light and fluffy.
- Beat in 3 large eggs one at a time, mixing well after each addition.
- Stir in 3 ripe mashed bananas (approx. 300g), 50g chopped pecans, 50g raisins, and 100ml buttermilk.
- In a separate bowl, sift together 200g self-raising flour and 1 tsp bicarbonate of soda. Gently fold the dry ingredients into the wet ingredients until just combined. Do not overmix.
- Spoon the batter into the prepared tin and level the top.
- Bake for 60-75 minutes, or until a skewer inserted into the center comes out almost clean.
- Remove from the oven and let stand in the tin for 10 minutes before turning out onto a wire rack to cool completely.
- For the icing: Whisk together 100g icing sugar with 2-3 teaspoons of cold water until smooth and pourable.
- Drizzle the icing over the cooled loaf.
