How to Make Barbecue Limas
- Place 1 pound dried lima beans in a large soup pot with a 1-pound ham bone or hock.
- Add 3 cups of water and bring to a boil. Boil for 2 minutes.
- Remove from heat, cover the pot, and let stand for 1 hour.
- Drain the beans, reserving 1 cup of the cooking liquid.
- In a large bowl, combine the drained beans, reserved liquid, and the remaining ingredients (see below).
- Transfer the mixture to a 2.5-quart casserole dish.
- Bake uncovered at 300°F (150°C) for 2 hours and 25 minutes, adding more reserved liquid or water if the mixture becomes too dry. Uncover during the last 30 minutes of baking to allow for browning and thickening.
