How to Make Barbecue Limas

  1. Place 1 pound dried lima beans in a large soup pot with a 1-pound ham bone or hock.
  2. Add 3 cups of water and bring to a boil. Boil for 2 minutes.
  3. Remove from heat, cover the pot, and let stand for 1 hour.
  4. Drain the beans, reserving 1 cup of the cooking liquid.
