- Preheat grill to medium-high heat or preheat broiler.
- Rinse and pat dry 2 (6-ounce) salmon steaks or fillets.
- In a small bowl, whisk together 2 tablespoons olive oil, 1 tablespoon chopped fresh parsley, 1 tablespoon chopped fresh dill, 1 tablespoon lemon juice, and 1/2 teaspoon salt and 1/4 teaspoon black pepper.
- Coat both sides of the salmon fillets generously with the herb mixture.
- Place salmon fillets on the preheated grill grates or on a broiler pan.
- Grill for 5-7 minutes per side, or until the salmon is cooked through and flakes easily with a fork. Broil for 4-6 minutes per side, or until cooked through. Cooking time will depend on the thickness of the fillets. Internal temperature should reach 145°F (63°C).
- Remove from grill or broiler and let rest for 2-3 minutes.
- Serve immediately, garnished with lemon wedges and fresh herbs.
Chef's Tip for Extra Flavor
Want to unlock deeper, more complex flavors? Try toasting your whole spices before grinding them, or blooming ground spices in a little warm oil to enhance their aroma. Deglazing your pan with a bit of stock, wine, or even water after browning ingredients can capture those tasty caramelized bits, adding richness to your dish.
