How to Make Asparagus N Shrimp With Angel Hair

  1. Cook 8 ounces angel hair pasta according to package directions. Reserve 1/2 cup pasta water before draining.
  2. While pasta cooks, pat 1 pound shrimp dry and sprinkle with 1/4 teaspoon salt and 1/8 teaspoon red pepper flakes.
  3. Heat 1 tablespoon olive oil in a large skillet or wok over medium-high heat.
  4. Add shrimp and stir-fry for 2-3 minutes per side, or until pink and cooked through. Remove with a slotted spoon and set aside.
  5. Add 1 tablespoon olive oil to the skillet. Add 1 cup sliced asparagus, 1/2 cup sliced mushrooms, 1/2 cup chopped tomato, 2 cloves minced garlic, and 1/4 cup chopped onion. Stir-fry for 5 minutes, or until vegetables are crisp-tender.
  6. Pour in 1/4 cup dry white wine or chicken broth. Add 1 tablespoon chopped fresh basil, 1 teaspoon dried oregano, 1 tablespoon chopped fresh parsley, and 1/2 teaspoon dried thyme.
  7. Return shrimp to the skillet.
  8. Add the drained pasta to the skillet and toss gently to combine. Add reserved pasta water, 1 tablespoon at a time, if needed, to create a light sauce.
  9. Cook and stir for 1-2 minutes, or until heated through.
  10. Remove from heat and stir in 1/4 cup grated Parmesan cheese.
  11. Serve immediately and enjoy!
