  1. Preheat grill to medium heat or oven to 400°F (200°C).
  2. In a large bowl, combine 1 lb boneless, skinless chicken breasts (cut into 1-inch pieces), 2 lbs small red potatoes (halved or quartered if large), 1 cup chopped onion, 1/2 cup chopped bell pepper (any color), and 1/2 cup your favorite BBQ sauce.
  3. Divide the mixture evenly among 4 large sheets of heavy-duty aluminum foil (approximately 12x15 inches each).
  4. Bring up the sides of the foil, creating a packet. Fold over the edges twice to seal tightly, leaving a little space at the top for steam to escape.
