How to Make Bbq Pork Steaks
- Pat 2 lbs pork steaks dry and rub both sides generously with 2 tsp of your favorite BBQ rub.
- Refrigerate the steaks for at least 30 minutes to allow the flavors to meld.
- Prepare your smoker with ½ cup mesquite wood chips and ½ cup hickory wood chips. Maintain a temperature of approximately 250°F (121°C).
- Place the steaks in the smoker and smoke for at least 1 hour, turning once or twice during this time. Add more wood chips as needed to maintain smoke and temperature.
- Carefully remove the steaks from the smoker and transfer them to a roasting pan.
- Brush the steaks generously with ½ cup of your favorite BBQ sauce.
- Cover the roasting pan tightly with aluminum foil.
- Place the covered roasting pan in a preheated oven at 300°F (150°C) and bake for 90 minutes.
- Remove the pan from the oven, carefully remove foil, and brush the steaks with a light coating of additional BBQ sauce.
- Preheat your grill to medium-high heat.
- Place the pork steaks on the hot grill and cook for 10-15 minutes, turning occasionally and basting frequently with BBQ sauce, until a nice caramelized, dark crust forms.
- Remove from grill, let rest for 5 minutes, and enjoy!
Chef's Tip for Extra Flavor
Elevate your dish with simple flavor boosters! A final flourish of freshly chopped herbs can add incredible brightness, while a squeeze of lemon or lime juice right before serving can awaken all the flavors. Don't underestimate a sprinkle of quality finishing salt or a drizzle of good olive oil to make your creation shine.
