How to Make Bbq Roast
- Preheat oven to 350°F (175°C).
- In a small bowl, combine 1 tablespoon olive oil, 1/2 cup chopped onion, 2 cloves minced garlic, 1 teaspoon lemon pepper seasoning, and 1/2 teaspoon red pepper flakes. Rub this mixture generously all over the roast.
- Heat 1 tablespoon olive oil in a large cast iron skillet over medium-high heat.
- Sear the roast in the hot skillet for 2-3 minutes per side, until nicely browned.
- Pour 1 cup BBQ sauce, 1/4 cup ketchup, 2 tablespoons honey, and 1/4 cup water over the roast in the skillet.
- Turn the roast several times to coat it evenly with the BBQ mixture.
- Tent the cast iron skillet loosely with aluminum foil.
- Transfer the skillet to the preheated oven and cook for 2 1/2 hours, or until the internal temperature reaches 190-195°F (88-91°C) for medium-rare, or until desired doneness is reached. Check and baste with pan juices every 30 minutes.
