How to Make Bbq Sirloin Steak Supreme
- Prepare the Garlic Confit: Trim about 1/3 of the garlic head and discard. Pack the whole head, root-end down, into a saucepan and cover with oil. Cook over very low heat for 1 hour, or until lightly browned. The slower the cooking, the better the flavor. Remove from heat, cool, and store in an airtight container with the oil.
- Prepare the Compound Butter (can be made a day ahead): In a mixing bowl, mash softened butter with a potato masher. Whisk in garlic confit, parsley, thyme, lemon zest, and salt until well combined. Place in a serving bowl or roll into a log shape with greaseproof paper and freeze or refrigerate.
- Season the Steaks: Season steaks generously with freshly ground black pepper.
- Sear the Steaks: Preheat your grill or a heavy-bottomed skillet to high heat. Sear steaks for 1 minute per side to seal in juices.
- Cook to Desired Doneness: For medium-rare, cook for 3 minutes per side after searing. For medium, cook 3 minutes per side after searing, then move to a cooler spot on the grill and cook for another 3 minutes per side. For well-done, cook 5 minutes per side after searing. Use a meat thermometer to ensure doneness.
- Rest the Steaks: Remove steaks from heat and let rest on a warmed plate for 3 minutes before slicing.
- Serve: Slice steaks and serve immediately with compound butter (sliced into 3cm thick rings or spooned over), barbequed sliced potatoes, and a fresh green salad.
Chef's Tip for Extra Flavor
Small additions can make a big impact! Try a sprinkle of fresh herbs, a dash of your favorite spice blend, or a squeeze of citrus just before serving to really enhance the flavors of your dish.
