How to Make Beef Curry With Apples And Raisins
- In a ziploc bag, combine 1/4 cup all-purpose flour, 1 teaspoon salt, and 1/2 teaspoon black pepper.
- Add 1.5 lbs beef stew meat (cut into 1-inch cubes) to the bag and shake until evenly coated.
- Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Brown the beef in batches until caramelized, ensuring not to overcrowd the pan.
- Remove the browned beef from the skillet and set aside. Drain excess oil if needed.
- Add 1 large onion (chopped) to the skillet and sauté with 1/4 cup beef stock until softened (about 5 minutes).
- Stir in 1 bay leaf, 2 tablespoons curry powder, 4 cloves, 1 teaspoon Splenda (or sugar), and 1 1/2 cups beef stock.
- Bring the mixture to a simmer.
- Return the beef and any accumulated juices to the skillet.
- Reduce heat to medium-low, cover, and simmer for 1 hour.
- Add 1 cup peeled and diced apples (such as Honeycrisp or Fuji), 1 cup peeled and cubed potatoes, and 1/2 cup raisins to the pan.
- Cover and cook for another 45 minutes, or until the beef is tender and the potatoes are cooked through.
- Remove the bay leaf and cloves before serving. Discard the cloves and garlic (if added).
- Serve the beef curry generously over cooked couscous.
