- 2 lbs potatoes, peeled and chopped into 1-inch cubes
- 1 large onion, chopped into wedges

- Prepared Mustard
- 1/4 cup chili sauce
- 2 tbsp Worcestershire sauce
- 2 tbsp apple cider vinegar
- 2 tbsp brown sugar
How to Make Beef Diablo
- Preheat your oven to 375°F (190°C).
- Trim excess fat from a 3-4 lb beef roast.
- Peel and chop 2 lbs of potatoes into 1-inch cubes. Chop 1 large onion into wedges.
- In a medium bowl, whisk together: 1/4 cup all-purpose flour, 2 tbsp Dijon mustard, 1/4 cup chili sauce, 2 tbsp Worcestershire sauce, 2 tbsp apple cider vinegar, and 2 tbsp brown sugar until a smooth paste forms.
- Place potatoes and onions in the bottom of your slow cooker.
- Place the beef roast on top of the potatoes and onions.
- Spread the flour paste evenly over the top of the roast.
- Cover and cook on low for 10-12 hours, or on high for 6-8 hours, until the beef is fork-tender.
- Remove the roast from the slow cooker and let it rest for 10 minutes before slicing and serving. Spoon the cooking juices over the beef before serving.
