How to Make Beef Diablo

  1. Preheat your oven to 375°F (190°C).
  2. Trim excess fat from a 3-4 lb beef roast.
  3. Peel and chop 2 lbs of potatoes into 1-inch cubes. Chop 1 large onion into wedges.
  4. In a medium bowl, whisk together: 1/4 cup all-purpose flour, 2 tbsp Dijon mustard, 1/4 cup chili sauce, 2 tbsp Worcestershire sauce, 2 tbsp apple cider vinegar, and 2 tbsp brown sugar until a smooth paste forms.
