  • 2 lbs potatoes, peeled and chopped into 1-inch cubes

  • 2 tbsp Worcestershire sauce
  • 2 tbsp apple cider vinegar
  • 2 tbsp brown sugar

How to Make Beef Diablo

  1. Preheat your oven to 375°F (190°C).
  2. Trim excess fat from a 3-4 lb beef roast.
  3. Peel and chop 2 lbs of potatoes into 1-inch cubes. Chop 1 large onion into wedges.
  4. In a medium bowl, whisk together: 1/4 cup all-purpose flour, 2 tbsp Dijon mustard, 1/4 cup chili sauce, 2 tbsp Worcestershire sauce, 2 tbsp apple cider vinegar, and 2 tbsp brown sugar until a smooth paste forms.
  5. Place potatoes and onions in the bottom of your slow cooker.
  6. Place the beef roast on top of the potatoes and onions.
  7. Spread the flour paste evenly over the top of the roast.
  8. Cover and cook on low for 10-12 hours, or on high for 6-8 hours, until the beef is fork-tender.
  9. Remove the roast from the slow cooker and let it rest for 10 minutes before slicing and serving. Spoon the cooking juices over the beef before serving.
