How to Make Beef Hot Pot

  1. Preheat oven to 375°F (190°C).
  2. Heat 1 tablespoon of olive oil in a large frying pan over medium-high heat. Brown 1 lb beef stew meat, 1 large onion (chopped), and 2 carrots (chopped) until browned on all sides. Set aside.
  3. In a 3-quart casserole dish, layer half of 2 lbs potatoes (peeled and thinly sliced), half of the remaining chopped onion, half of the remaining chopped carrots, and the browned beef.
  4. Repeat layering with the remaining potatoes, onion, and carrots.
  5. Pour 4 cups of beef stock over the layered ingredients.
  6. Brush the top layer of potatoes with 1 tablespoon of melted butter.
  7. Cover the casserole dish and bake for 1 hour.
  8. Remove the hot pot from the oven.
  9. Uncover and brush the potatoes again with 1 tablespoon of melted butter or beef dripping.
  10. Return to the oven for a further 30 minutes, uncovered, to brown the potatoes.
  11. Let stand for 10 minutes before serving. Garnish with fresh parsley.
