How to Make Beef In Guinness

  1. Season 2 cups all-purpose flour generously with salt and pepper in a shallow dish.
  2. Coat 2 lbs beef stew meat (cubed) evenly with the seasoned flour.
  3. Heat 2 tbsp olive oil in a large, heavy-bottomed pot or Dutch oven over medium-high heat. Brown the beef cubes in batches, ensuring not to overcrowd the pot. Remove browned beef and set aside.
  4. Add 1 large onion (chopped) to the pot and sauté until softened, about 5 minutes. Add 2 cups chopped carrots.
  5. Pour in 2 cups Guinness stout, scraping up any browned bits from the bottom of the pot. Add 1 cup beef broth, 2 bay leaves, and season generously with salt and pepper to taste.
