How to Make Beef Quesadillas

  1. Brown 1 lb ground beef in a large skillet over medium heat, breaking it up with a spoon, until no longer pink. Drain off any excess grease.
  2. Stir in 1 (15-ounce) can of rinsed and drained kidney beans, 1/2 cup chopped green chilies, 1 teaspoon dried oregano, 1 teaspoon ground cumin, 1 teaspoon chili powder, and 1/2 teaspoon salt.
  3. Cook over medium-low heat for 3-4 minutes, or until heated through.
  4. Brush one side of each tortilla with 2 tablespoons of melted butter.
  5. Spoon 1/2 cup of the beef mixture onto half of the unbuttered side of each tortilla.
  6. Sprinkle 1/4 cup of shredded cheddar cheese over the beef mixture.
  7. Fold the tortillas in half.
  8. Place the quesadillas on a lightly greased baking sheet.
  9. Sprinkle with 1/2 teaspoon paprika.
  10. Bake at 475 degrees F (246 degrees C) for 10-12 minutes, or until the tortillas are golden brown and the cheese is melted and bubbly.
  11. Cut into wedges and serve immediately.
