- Peel and chop approximately 8 medium-sized potatoes into 1-inch pieces.
- Place potatoes in a large pot and cover with cold salted water (about 1 inch above potatoes). Bring to a boil over high heat.
- Reduce heat to medium and simmer for 15-20 minutes, or until potatoes are easily pierced with a fork.
