- 100g (¾ cup) almond meal
- Icing Sugar
- 1 tsp baking powder
- Egg Whites
- 100g (½ cup) melted unsalted butter
- Plain Flour
- 100g (1 cup) fresh or frozen blueberries (or substitute with 1 cup of your favorite berries, chocolate chips, or slivered almonds)
How to Make Berry Friands
- Preheat your oven to 350°F (175°C). Grease and flour a 12-cup friand pan.
- In a large bowl, combine the melted butter, sugar, and eggs. Stir until well combined.
- Add the almond meal, flour, and baking powder. Stir until just combined. Do not overmix.
- Gently fold in your chosen berries or additions (blueberries, raspberries, chocolate chips, etc.).
- Divide the batter evenly among the prepared friand tins, filling each about ¾ full.
- Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
- Let the friands cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
