How to Make Blackberry Frozen Yogurt

  1. If using frozen blackberries, thaw them completely and drain any excess liquid.
  2. In a small saucepan, combine the sugar and gelatin.
  3. Gradually whisk in the milk and water until the gelatin is fully dissolved.
  4. Heat the mixture over low heat, stirring constantly, until the gelatin is completely dissolved. Do not boil. Remove from heat and set aside to cool completely.
  5. Place the blackberries in a blender or food processor.
  6. Blend until completely smooth.
  7. Press the blackberry puree through a fine-mesh sieve to remove seeds. Discard the seeds.
  8. In a large bowl, gently stir together the blackberry puree, yogurt, orange zest, and orange juice.
  9. Gradually whisk the cooled gelatin mixture into the yogurt mixture until well combined.
  10. Pour the mixture into a 9x5x3 inch loaf pan.
  11. Cover and freeze for at least 6 hours, or until almost firm.
  12. Remove from the freezer and break the frozen yogurt into chunks.
  13. Transfer the chunks to a large chilled mixing bowl.
  14. Beat with an electric mixer on medium speed until smooth and creamy, but not completely melted. Be careful not to overmix.
  15. Return the mixture to the loaf pan and cover tightly.
  16. Freeze for another 8 hours, or until completely firm. Allow to sit at room temperature for 5-10 minutes before scooping and serving.
