How to Make Blackberry Parfaits

  1. In a small bowl, whisk together 1/2 cup blackberry spread, 1 tablespoon amaretto, and 1 teaspoon vanilla extract until smooth.
  2. In a heavy medium saucepan, whisk together 1/2 cup granulated sugar, 1/4 cup all-purpose flour, 2 tablespoons cornstarch, and 1/4 teaspoon salt.
  3. Gradually whisk in 3 cups whole milk until smooth.
  4. Whisk in 1 large egg.
  5. Add 2 tablespoons (1/4 stick) unsalted butter.
  6. Whisk over medium heat until the mixture comes to a boil and thickens, about 6-8 minutes, whisking constantly.
  7. Continue to boil for 1 minute more, whisking constantly.
  8. Remove from heat and whisk in 1 teaspoon almond extract, 1 tablespoon amaretto, and 1/2 teaspoon vanilla extract.
  9. Spoon 1 teaspoon of the blackberry spread mixture into the bottom of each of four 1-cup stemmed glasses.
  10. Top each with 4 fresh blackberries, then with about 3 tablespoons of the hot pudding.
  11. Repeat layers twice more.
  12. Divide any remaining blackberries among the glasses.
  13. Refrigerate for at least 3 hours, or until completely chilled.
