How to Make Cantonese Stir Fried Lover's Shrimp

  1. Peel and devein 1 pound of shrimp. Rinse and drain thoroughly.
  2. **Marinade:** In a bowl, whisk together 1 tablespoon soy sauce, 1 teaspoon cornstarch, 1/2 teaspoon sesame oil, and 1/4 teaspoon white pepper. Add shrimp and marinate for at least 15-20 minutes.
  3. **Seasoning Sauce:** In a small bowl, combine 2 tablespoons soy sauce, 1 tablespoon oyster sauce, 1 tablespoon rice wine vinegar, 1 teaspoon sugar, and 1/2 teaspoon sesame oil.
  4. Trim the ends off 1 cup of snow peas. Parboil in salted water for 2 minutes; drain and set aside.
  5. Heat 1 tablespoon vegetable oil in a wok or large skillet over medium-high heat.
  6. Add snow peas and stir-fry for 2-3 minutes until crisp-tender. Season lightly with salt and arrange in the center of a serving platter.
  7. Heat 8 tablespoons vegetable oil in the wok.
  8. Add marinated shrimp and stir-fry for 2-3 minutes, until pink and curled. Remove shrimp with a slotted spoon and set aside.
  9. Drain all but 1 tablespoon of oil from the wok.
  10. Add 2 chopped scallions and 1 teaspoon minced ginger; stir-fry for a few seconds until fragrant.
  11. Return shrimp to the wok. Pour in the prepared seasoning sauce, stirring to coat evenly.
  12. Remove half of the shrimp and place it on one side of the platter.
  13. Add 3 tablespoons of ketchup to the remaining shrimp in the wok and stir briskly until coated.
  14. Remove the ketchup-coated shrimp and place it on the other side of the platter, alongside the savory shrimp.
  15. Serve immediately with steamed rice.
