How to Make 3 2 1 Shrimp
- Whisk together 1/4 cup rice vinegar, 2 tablespoons soy sauce, and 1 tablespoon sugar in a small bowl until completely dissolved.
- Heat 1 tablespoon oil in a large skillet or saute pan over high heat. Add 1 pound large shrimp (peeled and deveined) and sear for 2-3 minutes per side, until pink. Season immediately with salt and freshly ground black pepper to taste.
- Add 2 cloves minced garlic and 1 tablespoon grated fresh ginger to the pan. Sauté for 45 seconds, until fragrant.
- Pour the vinegar mixture over the shrimp. Add 1 cup cherry or grape tomatoes. Bring to a simmer and cook until the liquid has reduced by half, about 5-7 minutes.
- Stir in 2 tablespoons butter until melted and glossy. Serve immediately over cooked rice or mashed potatoes.
