How to Make Cheese Vegemite Mini Quiches
- Preheat oven to 210°C (410°F).
- Butter 6 slices of bread and spread each very thinly (almost transparently) with 1/2 teaspoon of Vegemite.
- Gently press the bread slices, Vegemite-side up, into the cups of a non-stick 6-cup muffin tin.
- Cook 4 slices of bacon, chopped, and 1 cup of sliced mushrooms in a frying pan over medium heat for 2-3 minutes, until bacon is crispy and mushrooms are softened.
- In a bowl, whisk together 3 large eggs, 1/4 cup heavy cream, 1/2 cup shredded cheddar cheese, 2 tablespoons chopped fresh chives, cooked bacon and mushrooms. Season with salt and pepper to taste.
- Spoon the egg mixture evenly into the prepared bread cups, filling each about ¾ full.
- Bake for 15-20 minutes, or until the quiches are set and lightly golden brown.
- Let cool slightly before carefully removing from the muffin tin. Serve warm or cold.
