How to Make Applesauce Bread Pudding

  1. Preheat oven to 350°F (175°C).
  2. Cut 4 cups of day-old sourdough bread into 1-2 inch cubes.
  3. Spread half of the bread cubes in the bottom of a large (9x13 inch) greased glass baking dish.
  4. In a medium saucepan, heat 2 cups of fat-free milk and 2 tablespoons of light butter over medium heat until butter is melted. Remove from heat.
  5. Stir in 1/2 cup packed light brown sugar.
  6. In a separate bowl, whisk together 2 large eggs and 1 teaspoon of vanilla extract until light and frothy.
  7. Gradually whisk the egg mixture into the warm milk mixture until well combined.
  8. Pour half of the milk mixture over the bread cubes in the baking dish, ensuring they are evenly soaked.
  9. Spread 1 cup of applesauce evenly over the soaked bread. Sprinkle with 1 teaspoon of ground cinnamon, 1/4 teaspoon of ground nutmeg, and 1/2 cup raisins.
  10. Add the remaining bread cubes and pour the rest of the milk mixture over the top.
