How to Make Apple Cider Bread Pudding
- Preheat oven to 350°F (175°C). Lightly grease a 9x13 inch baking dish.
- In a large bowl, combine 6 cups cubed stale bread, 2 cups cubed apples (about 2 medium), and 1/2 cup raisins.
- In a separate large bowl, whisk together 4 large eggs, 1 cup granulated sugar, 1 teaspoon ground cinnamon, 1/2 teaspoon ground nutmeg, 1/4 teaspoon ground cloves, and 1/4 teaspoon salt until well combined.
- Whisk in 2 cups whole milk and 1 cup apple cider. Pour the custard mixture over the bread cubes.
- Gently toss with a spatula until the bread cubes are evenly coated. Let stand for 15 minutes to allow the bread to absorb the liquid.
- Pour the mixture into the prepared baking dish and smooth into an even layer.
- Bake for 50-60 minutes, or until the bread pudding is puffed, lightly browned, and a knife inserted near the center comes out clean. If browning too quickly, tent loosely with foil.
- Cool for at least 15 minutes before serving. Serve warm with a scoop of vanilla ice cream or whipped cream (optional).
- Store leftovers covered in the refrigerator for up to 3 days.
