How to Make Chocolate Wows

  1. Preheat oven to 325°F (160°C).
  2. Line two baking sheets with parchment paper.
  3. In a small bowl, whisk together 2 cups all-purpose flour, ¾ cup unsweetened cocoa powder, 1 teaspoon baking powder, and ½ teaspoon salt.
  4. In a heavy saucepan, melt 1 cup semi-sweet chocolate chips, 1 cup milk chocolate chips, ½ cup dark chocolate chips, and ½ cup (1 stick) unsalted butter over low heat, stirring constantly until smooth.
  5. Remove from heat and let cool slightly.
  6. In a large bowl, beat 2 large eggs and 1 ½ cups granulated sugar at medium speed until light and lemon-colored (about 2 minutes).
  7. Reduce speed to low and gradually add the cooled chocolate mixture, flour mixture, and 1 teaspoon vanilla extract. Beat until just combined.
  8. Increase speed to medium and beat for 2 minutes.
  9. Stir in 1 cup chopped pecans and ½ cup chocolate chips using a wooden spoon.
  10. Drop rounded tablespoons of batter onto prepared baking sheets, leaving 2 inches between each cookie.
  11. Gently flatten each cookie to about 2 inches in diameter using the back of a spoon.
  12. Bake for 13 minutes, or until the tops are shiny and cracked. If baking two sheets simultaneously, rotate the sheets halfway through.
  13. Cool on the baking sheets for 10 minutes before transferring to a wire rack to cool completely.
