Ingredients for Conkies

  • Pumpkin
  • Coconut
  • 1 cup cooked and mashed sweet potato
  • Sugar
  • Cornflour
  • Butter
  • Nutmeg
  • Cinnamon
  • Vanilla Essence
  • 1/4 cup raisins
  • Banana Leaf

How to Make Conkies

  1. In a large bowl, combine 1 cup grated coconut, 1 cup sweet potato (cooked and mashed), 1/2 cup brown sugar, 1/4 cup cornmeal, 1/4 cup all-purpose flour, 1 teaspoon ground cinnamon, 1/2 teaspoon ground nutmeg, 1/4 teaspoon ground cloves, 1/4 teaspoon salt, 1/4 cup raisins, 1/4 cup chopped pecans, and 1/2 cup milk (or coconut milk). Mix thoroughly until well combined.
  2. Using a large banana leaf (or parchment paper squares as an alternative), place approximately 1/2 cup of the conkie mixture into the center of each leaf.
  3. Carefully fold the banana leaf over the mixture to create a secure parcel (or fold the parchment paper to form a packet).
  4. Place the conkies in a steamer basket, ensuring they are not overcrowded. Add enough water to the bottom of the pot to ensure the water reaches the bottom of the steamer.
  5. Steam for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Cooking time will depend on the size of your conkies.
  6. Carefully remove the conkies from the steamer, allow to cool slightly, and enjoy this traditional Barbadian treat! Serve warm.

Chef's Tip for Extra Flavor

Elevate your dish with simple flavor boosters! A final flourish of freshly chopped herbs can add incredible brightness, while a squeeze of lemon or lime juice right before serving can awaken all the flavors. Don't underestimate a sprinkle of quality finishing salt or a drizzle of good olive oil to make your creation shine.
