How to Make Conkies
- In a large bowl, combine 1 cup grated coconut, 1 cup sweet potato (cooked and mashed), 1/2 cup brown sugar, 1/4 cup cornmeal, 1/4 cup all-purpose flour, 1 teaspoon ground cinnamon, 1/2 teaspoon ground nutmeg, 1/4 teaspoon ground cloves, 1/4 teaspoon salt, 1/4 cup raisins, 1/4 cup chopped pecans, and 1/2 cup milk (or coconut milk). Mix thoroughly until well combined.
- Using a large banana leaf (or parchment paper squares as an alternative), place approximately 1/2 cup of the conkie mixture into the center of each leaf.
- Carefully fold the banana leaf over the mixture to create a secure parcel (or fold the parchment paper to form a packet).
- Place the conkies in a steamer basket, ensuring they are not overcrowded. Add enough water to the bottom of the pot to ensure the water reaches the bottom of the steamer.
- Steam for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Cooking time will depend on the size of your conkies.
- Carefully remove the conkies from the steamer, allow to cool slightly, and enjoy this traditional Barbadian treat! Serve warm.
