How to Make Country Dijon Poulet

  1. Melt 2 tablespoons of butter in a large skillet over medium-high heat. Brown 1.5 lbs boneless, skinless chicken breasts on both sides.
  2. Season chicken lightly with salt and pepper to taste.
  3. Add 2 cloves minced garlic, 1 bay leaf, 1 teaspoon dried marjoram, 1 teaspoon dried thyme, 1 cup chicken broth, and ½ cup dry white wine to the skillet.
  4. Bring to a simmer, then reduce heat to low, cover, and cook for 35 minutes, stirring occasionally, until chicken is almost cooked through.
  5. Add 1 cup chopped onions, 1 cup chopped carrots, and 1 cup quartered artichoke hearts to the skillet.
  6. Continue to simmer, covered, for 10 minutes, or until vegetables are tender.
  7. Remove chicken and vegetables from the skillet and transfer to a heated serving dish. Set aside.
  8. Stir in 2 tablespoons Dijon mustard into the remaining liquid in the skillet.
  9. Bring the sauce to a boil.
  10. In a small bowl, whisk together 1 tablespoon all-purpose flour and 2 tablespoons cold water until smooth. Slowly whisk the slurry into the boiling sauce. Continue to cook and stir until the sauce has thickened to your desired consistency (about 1-2 minutes).
  11. Pour the sauce over the chicken and vegetables. Serve immediately and enjoy!
