How to Make Crme De Menthe

  1. Wash 2 cups of fresh mint leaves thoroughly under cold running water, ensuring all dirt is removed.
  2. Gently pat the mint leaves dry with a clean kitchen towel or paper towels.
  3. Using kitchen shears, snip each mint leaf into halves or thirds.
  4. Discard the stems.
  5. In a clean glass jar, combine the chopped mint leaves with 1 cup (237 ml) of high-quality vodka. Seal the jar tightly.
  6. Steep the mixture in a cool, dark place for 2 weeks, shaking the jar gently every other day to ensure even infusion.
  7. After 2 weeks, strain the mint leaves from the vodka using a fine-mesh sieve or cheesecloth, pressing gently to extract all the liqueur.
  8. In a small saucepan, combine 1 cup (200g) of granulated sugar with ½ cup (120ml) of water. Bring to a boil over medium heat, stirring constantly until the sugar dissolves completely. Remove from heat and let the simple syrup cool completely.
  9. Once the simple syrup is cool, add it to the strained vodka mixture. Stir well to combine.
  10. Add any optional ingredients (see variations below).
  11. Transfer the Crème de Menthe to a clean, airtight bottle or jar. Allow to age in a cool, dark place for 1 to 3 months to allow the flavors to meld and mature. The longer it ages, the smoother it becomes.
  12. Once aged, enjoy your homemade Crème de Menthe in cocktails or on its own over ice.
