How to Make Crock Pot Chunky Chicken Soup
- Place 1.5 lbs boneless, skinless chicken breasts in the bottom of your crock pot.
- Add 1 large onion, chopped; 2 carrots, chopped; 2 celery stalks, chopped; 4 cups chicken broth; 2 cups water; 2 potatoes, peeled and cubed; 1 tsp dried thyme; 1 tsp dried rosemary; 1/2 tsp salt; 1/4 tsp black pepper; and 1 bay leaf.
- Cover and cook on low for 5 hours, or until chicken is cooked through and easily shreds.
- Remove chicken from crock pot and allow to cool slightly. Shred chicken, discarding skin and bones.
- Return shredded chicken to the crock pot.
- Stir in 1/2 cup chopped fresh parsley (optional).
- Cover and cook on low for an additional 30 minutes to allow flavors to meld. Serve hot and enjoy!
